The ‘Malvatica’ by Camillo Donati is the sparkling wine of the Emilian tradition. The winemaking takes place with a short maceration process on the skins, following the oldest peasant customs. A choice that enriches the wine's profile with intense and ripe aromas, providing a pleasant complexity and depth to the sip. It is an orange wine with a not exaggerated profile, featuring its characteristic notes of ripe fruit, citrus, and fresh almond. It is a typical wine of the territory, harmonious, with great pleasantness and balance.
The ‘Malvatica’ is Camillo Donati's personal interpretation of the territory and one of its most representative grape varieties. The winery has preserved its artisanal character, passing down from generation to generation a precious peasant know-how. The estate is located in the hilly area south of Parma and extends over approximately 15 hectares. The vineyards are managed according to the principles of organic farming, without the use of chemical products, to maintain the environmental ecosystem and the natural biodiversity of the territory. Faithful to family traditions, Camillo Donati has immediately embraced the idea of producing wines in line with the history of the territory, remaining faithful to the customs learned from his father and grandfather. The only concern is to produce healthy and rich grapes, then in the winery, minimal interventions are made, allowing the winemaking to take place as naturally as possible.
The ‘Malvatica’ by Camillo Donati is produced with grapes from vineyards cultivated on calcareous soils, with the presence of silt and clays. The winemaking takes place in steel with spontaneous fermentation using only indigenous yeasts and a maceration on the skins for 2 days. It presents a bright golden yellow color. The olfactory profile expresses aromas of citrus, ripe yellow fruit, honeyed softness, notes of dried fruit, and hints of aromatic herbs. On the palate, it has a good body, with broad and complex aromas, expressing a particular harmony. The mid-palate has a dense and juicy fruit, with a slight tannic roughness. The finish is fresh and savory.
