Cume do Avia

In Galicia, precisely within the province of Ourense, lies the artisanal winery Cume do Avia, committed to the enhancement of the winemaking tradition of the Ribeiro territory, a beautiful area with a designation of origin that boasts a millennia-old wine heritage. The winery was founded in 2005 by cousins Diego Diéguez, Alvaro Diéguez, Fito Collarte, and Anxo Collarte, who decided with youthful enthusiasm to leave their respective jobs to recover old abandoned vineyards in Eiras do Mouros, the village of their grandparents. The family project required 8 long years of research, negotiations with local winemakers, and the planting of new vineyards ex novo to officially inaugurate the first vintage with the 2013 harvest. The estate's name pays homage to the local river, Avia.

white, Brancellao, Souson, Caiño Tinto, Merenzao, Ferron, Carabuñenta, and Mouraton for the red grapes. The vines, managed according to the principles of organic farming integrated with the use of biodynamic preparations, are planted in predominantly sandy and chalky soils at an altitude ranging from 250 to 390 meters above sea level. The harvest is carried out entirely by hand at the perfect stage of grape ripeness, which are then transferred to the winery where fermentations occur spontaneously in stainless steel tanks or chestnut casks thanks to the sole intervention of indigenous yeasts, without the addition of enological additives and auxiliaries, except for minimal quantities of sulfites at bottling when the wine requires it. The subsequent maturation phase always takes place in steel or in wooden barrels of different types and sizes.
