Domaine Alain Chavy

The Domaine Alain Chavy operates in the prestigious Côte d’Or, precisely in Puligny-Montrachet, a famous village in the Côte de Beaune from which some of the most important white wines in the world come. From 1986 to 1997, Alain Chavy and his brother Jean-Louis worked with their father Gérard, and then continued together after their father's retirement until 2003, the year in which the family property was divided between the two brothers. Alain then built his underground cellar right in the village of Puligny-Montrachet, where he has always lived with his family. This is one of the few underground cellars present in the village since the high water table makes any underground construction complicated.

The hectares on which the vineyards of Domaine Alain Chavy extend are approximately 10, reserved exclusively for Chardonnay, the principal variety of the area, and managed according to the principles of rational agriculture, thus limiting environmental impact and excluding the use of herbicides. In particular, the planted hectares are distributed between the territories of Puligny-Montrachet and, to a lesser extent, Chassagne-Montrachet and Meursault. The harvest is carried out entirely by hand, and the grapes are then vinified separately, except for the Village wines, through gentle pressing and alcoholic fermentation at controlled temperature in French oak barrels, partly represented by 400-liter tonneaux and partly by the traditional pièces of 228 liters. Malolactic fermentation occurs slowly and spontaneously, and the maturation phase also takes place in oak, with the use of new wood around 20-30% and a light recourse to the practice of batonnage. To ensure a brilliant color and remarkable aromatic clarity, the wines are finally bottled after clarification and filtration operations.

The production of Domaine Alain Chavy consists of exceptional longevity white wines, endowed with an elegant and distinctly mineral style that reflects the character of the terroir. Among the prestigious lieu-dits of Puligny-Montrachet that the Domaine can boast is 'Les Charmes', a plot bordering the homonymous Premier Cru of Meursault.
