The family-run Abruzzese winery De Fermo presents the Rosato ‘Concrete’, a bottle with a genuine and pure soul crafted with a nature-respecting approach that honors its delicate balances. In 2010, Stefano Papetti Ceroni and his wife Eloisa de Fermo decided to continue the winemaking activity of her family, dating back to the late 1700s, embracing a sustainable production spirit based on the principles of biodynamic agriculture from the very beginning. Within the estate, located in Loreto Aprutino, rows of traditional grape varieties Montepulciano, Pecorino, and Trebbiano can be found, along with some international varieties.
The De Fermo ‘Concrete’ Rosato is produced solely from red grapes grown according to the principles of biodynamic agriculture on soils primarily composed of clay and limestone. The harvest is carried out entirely by hand in small crates, and the bunches are then vinified as rosé through a short maceration on the skins of about 1-2 hours, followed by the spontaneous alcoholic fermentation of the must in cement tanks through the action of indigenous yeasts, without temperature control. Throughout the entire process, the use of clarification or filtration operations is also prohibited.
The ‘Concrete’ Rosato from the artisanal Abruzzese reality De Fermo is of a pale intense pink color. The nose unfolds with aromas of red fruits such as wild strawberries and raspberries, as well as hints of rose petals and aromatic herbs, combined with pleasant mineral notes. Fresh, clean, and deep on the palate, with great energy and a pleasant persistence of fruity and floral sensations. A rosé wine to pair with platters of cured meats and medium-aged cheeses, as well as legume soups or flavorful second courses of fish.
