Langhe Favorita 'Servaj' is a white wine from the Roero area characterised by citrus and floral aromas, produced by the family-run Deltetto. The term in the Piedmontese dialect 'servaj', the label's name, means 'wild', chosen by the Deltetto family to emphasise the untamed character of the Roero, an area composed of steep, sandy hillsides rich in vines, fortresses and dense wild woods. As for the original grape variety, Favorita, this is none other than a Vermentino clone widespread in Basso Piemonte, where it was introduced over the centuries from nearby Liguria via the famous Via del Sale, an ancient route linking the Piedmont and French Alps to the Ligurian Sea.
Favorita Deltetto Langhe 'Servaj' comes from only Favorita grapes grown with respect for the health of the plants and the environment in general. After harvesting, the grapes are immediately transferred to the cellar, where they undergo soft pressing, with the must thus obtained being transferred to stainless steel tanks for alcoholic fermentation at a controlled temperature of 16 °C. Steel containers are also used for the subsequent maturation phase, which lasts a few months, and following a further brief refinement in the bottle, the wine is finally ready for release.
The colour of Deltetto's Langhe 'Servaj' Favorita is a straw yellow with greenish highlights. On the nose, citrus and floral sensations reminiscent of orange blossom alternate with pleasant nuances of aromatic herbs and fresh almonds. The progression on the palate shows great freshness and drinkability, with a nice savoury trail accompanying the citrus and delicately almondy finish.
