The Perricone “Perric.one” by Castellucci Miano is a wine produced in Valledolmo in the province of Palermo, near the slopes of the Madonie. It is a cooperative involving the synergistic work of 125 members, coordinated by Piero Buffa and Tonino Guzzo. The project began with the idea of recovering old vineyards that had already existed at the end of the 1500s, re-evaluating them as an example of biodiversity in Valledolmo. The work philosophy is oriented towards environmental sustainability and the preservation of the ecosystem surrounding the vineyards, so that in the future it will be possible to continue to enhance an important tradition and value this unique territory.
The vineyards of the Perricone “Perric.one” by Castellucci Miano are located between 700 and 1050 meters above sea level. The plants have an average age between 20 and 30 years and their potential is enhanced by the presence of fruit trees and olive trees. The soil is mainly composed of sand, clay, and alkaline substance due to the presence of active limestone. The The climate is continental with cold winters and mild summers that are never excessively sultry. The harvest is done manually around mid-October; in the winery, alcoholic fermentation takes place with pumping over, followed by malolactic fermentation. It ages in steel for 3 months and in oak barrels for 10. It rests in the bottle for 6 months.

The bouquet of aromas is broad and recalls ripe plum, wild blackberry, and fruit in alcohol combined with intense spices like tobacco and licorice. On the palate, it is soft, elegant, and enveloping with good persistence and freshness that invites drinking. It pairs perfectly with traditional grilled and braised meat dishes, white meats, and first courses dressed with elaborate sauces; excellent also with vegetable-based dishes.
