Can Valles
Starting from these fundamental environmental, agronomic, and enological ingredients, the Can Vallès winery produces two white wines that stand out for their vibrant fresh-salty verve and for the intense and fragrant aromas due to the nature of the soils and the high altitudes at which the grapes grow. Among these, special mention goes to the ‘XaXaXa’, a blend of Xarel-lo and Chardonnay with a territorial and authentic soul.
mediterranean climate of the Penedès area, with altitudes ranging from 330 to 400 meters above sea level and the calcareous matrix of the soils, also characterized by the presence of clay and rocks. Following the harvest, the grapes undergo a soft pressing, followed by a slow spontaneous fermentation in temperature-controlled stainless steel tanks thanks to the intervention of only indigenous yeasts. For the subsequent aging phase, which takes place for several months on the fine lees, stainless steel tanks are always used.Starting from these fundamental environmental, agronomic, and enological ingredients, the Can Vallès winery produces two white wines that stand out for their vibrant fresh-salty verve and for the intense and fragrant aromas due to the nature of the soils and the high altitudes at which the grapes grow.
