Monfort

The Trentino estate Monfort has been managed at a strictly family level since 1945, the year in which Giovanni Simoni founded the winery just after the end of the Second World War. Forty years later, in 1985, Lorenzo Simoni bottled the first Metodo Classico signed Monfort, culminating a dream fueled by a modern and innovative project. From the initial properties in Lavis, in the Val di Cembra and in Palù di Giovo, the estate's holdings have gradually expanded and currently the vineyards are distributed among the territories of the Valle dell’Adige, the Val di Cembra, the Valsugana, and the Piana Rotaliana. Even today, Lorenzo manages the business, assisted by his children Chiara and Federico, the former involved in communication, hospitality, and administration while the latter is involved in the commercial aspect.

The vineyards owned by the Monfort winery, planted on as much as 70 hectares, are reserved for the main varieties of Trento DOC, namely Chardonnay and Pinot Nero, alongside other grape varieties intended for the production of still wines, including Lagrein, Teroldego, Nosiola, Gewurztraminer, Pinot Grigio, and the Muller-Thurgau. The altitudes range from 300 to 600 meters above sea level and the composition of the soils is quite heterogeneous, with varying porphyritic and sandy presence depending on the reference subzone. The vinification of the sparkling bases takes place in stainless steel tanks and in oak barriques, with the subsequent sparkling process conducted following the prized technique of Metodo Classico. The aging on the lees in the bottle lasts for a minimum of 24 months up to over 6 years, after which the sparkling wines are finally marketed generally with low dosage.

The Trento DOC sparkling wines thus represent the flagship of the Monfort winery, backed by nearly half a century of experience in the production of this renowned Metodo Classico, a true Italian excellence. The style of Monfort bubbles is a style made of refinement and balance, qualities derived from the estate's ability to combine the characteristics of the territory with the long aging on the lees in its cellars.
