Approximately 20 hectares of vineyards belong to the Cossignani L.E. Tempo estate, of which only a small part is dedicated to the winery's sparkling wines, produced with the traditional varieties Pecorino and Sangiovese. The plants are cultivated under certified organic farming on soils rich in calcareous sandstone, at an average altitude of 200 meters above sea level. For the fermentation and aging of the base sparkling wines, a combination of concrete tanks and oak barrels is used, while the sparkling process occurs in the bottle according to the Metodo Classico, with aging on the lees in glass that exceeds 24 months.

The sparkling wines produced by the Cossignani L.E. Tempo winery are two: a Metodo Classico Blanc de Blancs made solely from Pecorino grapes and a Metodo Classico Rosé made from pure Sangiovese. These are creamy and flavorful bubbles, created with very low dosages in order not to interfere with the characteristics of the grape variety and the territory of Massignano.
