The Ippolito winery is the guardian of a winemaking tradition that has its roots in the history of Calabria since 1845. Here, in the heart of the Cirò Marina territory and the gentle hills overlooking the Ionian Sea, the Ippolito family has managed to transform a passion into a life project that today, in its fifth generation, continues to embody the most authentic essence of Calabrian wine. The winery's goal has always been to recover and enhance native grape varieties such as Gaglioppo, Greco Bianco, Calabrese, Pecorello, and Greco Nero, which narrate the unbreakable bond with their land.
The Ippolito company manages over 100 hectares of vineyards divided among the estates of Mancuso, Feudo, and Difesa Piana, historic areas in the heart of the DOC Cirò. Here, the vine finds ideal conditions among sunny hills and ventilated plains, mostly trained to a horizontal spurred cordon with a small portion on high bush. The yields of the plants are contained, and the most important operations in the vineyard are carried out strictly by hand, in an approach that protects biodiversity, limits soil erosion, and favors organic farming techniques. During the harvest, each bunch is the result of careful selection. It is here that the fate of wines like Cirò Rosso, the modern Colli del Mancuso Riserva, or the more experimental labels like Pecorello and Pescanera is decided.
