Tenuta di Caseo - Tommasi

Located in the locality of Canevino, in the Oltrepò Pavese area, the production reality of Tenuta di Caseo – Tommasi is committed to the enhancement of Pinot Nero in sparkling wine form. The owners of the winery are the Tommasi family, one of the most important Italian wine families, who have properties in Veneto, Toscana, Umbria, Puglia, Basilicata, Sicilia and, indeed, Lombardia. The estate, dating back to the XIII century, includes woods and vineyards that shape the Alta Valle Versa, a territory located on the north-eastern slope of the Oltrepò. The purchase of the estate by the Tommasi family dates back to 2014 and is the result of an ambitious project born from the family's passion for great sparkling wines.

The total hectares on which the Tenuta di Caseo – Tommasi reality is articulated are as many as 120, of which 90 are reserved for vineyards, dedicated to the varieties Chardonnay, Moscato and, above all, Pinot Nero, the symbolic grape of the sparkling wines of Oltrepò Pavese. The rows grow on clayey soils characterized by the presence of active limestone, at altitudes ranging from 410 to 530 meters above sea level. As for the sparkling bases, the grapes are pressed very gently and the subsequent fermentations take place in temperature-controlled stainless steel tanks. After a few months of rest, the base wine is then subjected to the tirage operation according to two techniques: the Charmat Method and the Classic Method. The first involves a second fermentation in large autoclaves and gives rise to fresher and more immediate wines, while the second technique consists of a slow refermentation in the bottle associated with long aging on the lees, from which more complex sparkling wines are obtained. Finally, the Pinot Nero in still version is vinified in oak barrels, in full Burgundian style.
