Pato Filipa

Just a few steps from the Atlantic Ocean in the Portuguese region of Bairrada lies the beautiful reality of Filipa Pato. Daughter of Luis Pato, one of the prominent names in the world of Portuguese wines, Filipa, after studying chemical engineering, decided to return to Beiras and with the same passion and enthusiasm as her father founded her winery in 2001. Contrary to what everyone would have expected, Filipa chose the less easy path; she did not want to inherit her father's vineyards but to start her own business from scratch, beginning with some rented vineyards in Bairrada. Right from the start, she adopted a biodynamic approach (the first in the area) in order to produce territorial and spontaneous liquids that spoke candidly of that wonderful ocean that bathes these lands. Genuine but also innovative, a point of connection between ancient ancestral methods and modern techniques. Simple portraits of the territory in the absence of filters and tricks or, as the winemaker likes to define them, “authentic wines without makeup.” Since 2010, her husband, William Vouters, an expert sommelier and

a renowned Belgian restaurateur, who, madly in love with wine and his wife, decided to follow her in this project, investing all his professionalism and dedication.

The Pato winery embraces an ampelographic heritage of about 12 hectares of vineyards, covered by a rich quantity of local grapes, such as the white grape varieties Bical and Maria Gomes, or the iconic red of the area, Baga. Healthy and flavorful grapes, the result of meticulous work that involves the total absence of chemical and synthetic products. The vines are rooted in clay-limestone soils with a strong sandy component. In the winery, spontaneous fermentations are carried out, catalyzed by indigenous yeasts, following a craft philosophy that prohibits invasive processes such as filtration, clarification, or massive additions of sulfites. The aging takes place in terracotta amphorae, which allow, thanks to their excellent thermal insulation capabilities, to best preserve the wine.

In the wines of Filipa Pato the ocean and the purity of the fruit can be found. They are tense, candid, and fine, endowed with a refined

texture and a marine and mineral framework. Simply unique!
