Klabjan

Uroš Klabjan carries on one of the excellent artisan wineries on the Istrian coast, 20 km south of Trieste and rooted in the Ospo valley, between the area of Dolina, Črni Kal, the Noghere valley, and the muggesano. Following the traditions and teachings of his grandfather, his wines are made respecting the trends of the vintages, with the sole aim of not being invasive either on the wine or on the grapes. Thanks to this, he is part of the natural winemakers association Vin Natur. Production varies from 18 to 30 thousand bottles depending on climatic conditions. The winery's approach is indeed not to follow market trends, but rather to aim to have the best product for enthusiasts who can understand Klabjan's work.

This valley in the Gulf of Trieste where the vineyards are located is characterized by saline winds coming from the Adriatic Sea and large temperature excursions between day and night, which are however moderated by the Bora. The cultivated area extends for 10 hectares arranged in white soil, clay, and flysch. Uroš applies the same techniques in the cellar and in the vineyards: no intervention. In order to preserve a pure expression of the fruit, the wines ferment spontaneously with a relatively short skin maceration.

Although young, Uroš has a great deal of experience behind him. With a background in oenology, he does not feel tied to conventional winemaking. Often, therefore, in contrast to the standard view of enologists, who tend to follow chemical and market characteristics, his wine evolves following various experiments based on his feelings. His bottles with black labels are those with wine from more than fifty-year-old vines, while the white ones are dedicated to the younger ones.
