The winery is located precisely in Eikenhof, in the Polkadraai Hills area, where the Oddo family produces great wines leveraging their prestigious French tradition, with a touch of modernity characteristic of the New World. In this adventure, the family is supported by Willie Joubert, manager of the estate, Schalk-Willem Joubert, technical director, and Petri Venter, consulting winemaker. For their logo, the Oddo family chose the rooster, a symbol of France, selecting its song, “le chant” in French, as the name for the project, symbolizing confidence, pride, and determination, values that accompany the production approach of the Oddo family.

Cabernet Sauvignon and Cabernet Franc, alongside other French grapes Shiraz and Chenin Blanc, as well as the Italian Sangiovese. The vines are situated on the gentle hilly slopes of Polkadraai Hills, primarily composed of decomposed granite. Here, the plants enjoy altitudes ranging from 220 to 280 meters above sea level, with southern and south-western exposures and the cold ocean winds blowing from both False Bay and, under certain conditions, Table Bay. The agronomic management adheres to the principles of organic farming, while the winery's approach is precise and modern. After manual harvesting, the grapes are vinified in white or red inside stainless steel tanks, concrete vats, or old French oak barrels.

The production of the Le Chant winery includes just two labels, a white wine and a red, the former made from pure Chenin Blanc grapes, the latter resulting from the blend of the classic Bordeaux style with small percentages of Shiraz and Sangiovese grapes.
