Domaine Chasselay

Domaine Chasselay represents a historic wine-growing reality of Beaujolais, an area of Southern Burgundy, engaged in wine production since as far back as 1464… even before the discovery of America! The winery is located exactly within the small municipality of Châtillon, included in the Rhône department administratively and in Burgundy geographically-winegrowing. The foundation of the Domaine's production philosophy is respect for the environment and the quality of the fruit, aimed at enhancing the character of the territory through non-invasive processes.

The Domaine Chasselay estate extends over 15 hectares of vineyards, entirely managed under certified organic farming, included in the prestigious crus of Côte de Brouilly, Brouilly, Fleurie, Morgon, and Moulin-à-Vent, which represent half of the 10 total crus of Beaujolais. The soils vary according to the reference area, with a variable presence of clay, limestone, and granite in different forms depending on the specific cru. The cultivated varieties, resulting from a mass selection,massive, they are the traditional ones from Burgundy, namely Chardonnay, Pinot Noir and, above all, Gamay, the symbolic variety of Beaujolais. The vines exceed a century of age in certain plots and are planted with high densities of plants per hectare in such a way as to contain the quantity of production while enhancing its quality. The harvest is carried out entirely by hand and even in the winery genuine practices are adopted, such as completely spontaneous fermentations in concrete tanks and the exclusion of the use of sulfites, added in minimal quantities only at bottling when necessary. As per tradition for the area, the bunches are usually whole-cluster fermented for semi-carbonic maceration, while the subsequent aging phase takes place in wooden barrels for a period ranging from 6 to 12 months.

The result is genuine, typical and juicy expressions that reflect the established tradition and the centuries-old history of Domaine Chasselay. A pride of the winery are the various crus that the Domaine can boast on the label: from the floral character of Fleurie to the important structure of Morgon, passing through the balance of Brouilly.
