Domaine des Canailles

Domaine des Canailles is a small and young artisanal winery located in Ternand, in the southern part of the Beaujolais area, following a production approach in harmony with nature. The origins of the winery date back to 2010, the year when Simon Pérot and Etienne Ubaud met during their studies in Wine Business in Gaillac, in the southwest of France. In the following years, Simon studied Viticulture and Oenology in Burgundy and collected experiences with important producers in the Loire and Northern Rhône, such as Domaine des Grandes Vignes – Vaillant and André Perret. Meanwhile, Etienne later obtained a diploma as a specialized sommelier and worked in wine shops and restaurants in Toulouse, before settling for a short period in Montreal, Canada. With the 2019 vintage, Simon and Etienne made their first harvest after taking over the vineyards of Jean-Jacques Paire.

Domaine des Canailles consists of 8 hectares of vineyards dedicated to the traditional grape varieties of Beaujolais, namely Gamay and Chardonnay, located at an altitude between 450 and 550 meters above sea level. Embracing the principles of organic farming since 2005 and biodynamics since 2019, the estate cultivates vines that are up to 60 years old, planted in granitic soils. The winemaking approach is highly genuine, based on whole cluster fermentations with spontaneous alcoholic fermentation carried out by the natural yeasts present on the grapes and in the winery environment, often associated with a brief carbonic maceration. Stainless steel tanks, terracotta amphorae, or concrete eggs are used as winemaking containers, and throughout the entire processing, clarification or filtration operations are excluded. Additionally, sulfites are added in minimal quantities at bottling only when necessary.

The selection from the Domaine des Canailles winery includes expressions with juicy fruit, endowed with exceptional grace and dynamism. The personality of the rosé wine ‘Le Rosé du Matin’ is surprising, a Gamay with a small percentage of Chardonnay from very old vines, processed exclusively in concrete eggs.
