Torresano
Tomas Torresano is an emerging Spanish winemaker who, with sustainable and artisanal methods, runs the small family winery located in La Puebla de Almoradiel, in the wine region of Castile La Mancha. The production philosophy embraced by Tomas is based on small parcel vinifications carried out by hand, without any corrective intervention, while minimizing transfers to avoid stressing the wines. The care given to each micro-vinification is meticulous and loving, aimed at enhancing the expressive authenticity of the originating parcel.
The few hectares of vineyards available to the Torresano estate are mainly dedicated to the native white grape variety Airén, alongside Garnacha, Tinto de Pampana Blanca, the local name for Tinto Velasco, and Cencibel, a clone of Tempranillo, all traditional grape varieties of the area. The vines, some of which are very old, are located at high altitudes approaching 700 meters above sea level and are managed according to sustainable agriculture based on regenerative viticulture, an agronomic vision.that frames the vineyard as a complex ecosystem to which what cultivation takes away must be returned. Harvests are carried out by hand at night to avoid bringing overheated bunches into the winery, where fermentations occur spontaneously in stainless steel tanks, often accompanied by long skin macerations even for white grapes. Maturations also take place in steel, and alongside still wines, Tomas produces lively sparkling wines following the Metodo Ancestrale, which involves spontaneous secondary fermentation in the bottle through the introduction of must-wine that has not yet been fully transformed. Throughout the entire production process, the use of clarification or filtration operations is excluded.
The production of Tomas Torresano's winery is very limited, with each label never reaching 1,000 bottles released per harvest. The selection includes red, rosé, sparkling, and orange wines of great character, true expressions of the plot and the grape variety of origin.
