Volcanalia

Immersed in the volcanic landscape between Verona and Vicenza, on the hills of Gambellara, Volcanalia is a winery deeply connected to its territory and its history. The name recalls the Roman festivals in honor of the god Vulcan, celebrated on August 23, at the end of the harvest: a direct reference to the primordial force of fire and the bond between man and nature. The vineyards of Volcanalia extend over four hectares laid out on ancient terraces at about 300 meters above sea level, nestled between the last foothills of the Monti Lessini. We are in an area that 45 million years ago was a volcano, and today represents one of the most characteristic wine-growing areas of Veneto, thanks to its basaltic soils of volcanic origin, capable of giving the wines minerality, finesse, and personality. Here, only Garganega is cultivated, the symbolic variety of the denomination, in a small untouched valley protected by a dense forest.

The harvest, entirely manual, takes place between September and October: the first bunches are destined for the production of sparkling wines, such as the refermented on the lees and the classic method, while the last, more mature ones, are selected for the Recioto or for macerations. One of the most fascinating practices is the system of Picai, an ancient tradition that consists of hanging the bunches with hemp ropes for natural drying in ventilated environments: a technique that allows for slow and complete dehydration of the grapes, enhancing the aromas and concentration of the future wine.

In the cellar, every gesture is guided by simplicity and respect for the raw material. The manual press is still used for the pressing of the Picai, while the musts destined for the most important wines mature in ancient oak barriques. The passito wine, for example, is born after years of silent aging, while the more immediate wines rest in steel, to preserve their freshness.
