Hochklaus
The HochKlaus estate is located in Alto Adige, precisely in Cornedo, above Bolzano, and is the result of the work of winemaker Klaus, who chose to pursue a training path abroad, to then apply his knowledge to his homeland. The philosophy of the estate is based on genuineness and autonomy, rejecting any kind of pretentious luxury. Klaus sees his work as a support to nature, a cycle in which human intervention is minimal but necessary to obtain a genuine and high-quality product. The estate is a harmonious environment where plants, animals, and humans live in perfect symbiosis, a concept that is reflected in the HochKlaus logo, a perfect circle symbolizing respect for the natural balance.

Klaus cultivates a soil rich in sand, clay, and porphyry, which allows the vines to develop moderately, ensuring a balanced ripening of the grapes. The sustainable approach also extends to animal management, with sheep contributing to the mowing of the land, promoting a balanced ecosystem without the need for chemical interventions.
Klaus's working method is inspired by natural cycles, particularly the rhythms of the moon. His practices in the vineyard and cellar follow the lunar cycle, planting the vines only during the waning moon and practicing racking and bottling only during the full moon. Vinification occurs with spontaneous fermentation, without additives or filters, in a process that fully reflects his philosophy of respect for nature.
