Il Ceo

Il Ceo is a small artisanal winery in the Breganze area that, with humility and passion, aims at the enhancement of the ancient viticultural heritage of the territory. The soul of this reality located in Cittadella is Davide Andreatta, known as "Il Ceo", a winemaker who embarked on his winemaking adventure in 2014 after approaching the world of wine and discovering his own path. Initially, he rented a vineyard in Breganze planted with traditional and international varieties, realizing right away that the former were the ones that resisted diseases better. This led to the idea of placing these grape varieties, which had been relegated to a marginal role in recent decades, at the center of his project.

Davide Andreatta of the small estate Il Ceo cultivates approximately 4 hectares of vineyards located at an average altitude of 250 meters above sea level, characterized by the presence of old vines as well. Here, the traditional grape varieties Vespaiola, Groppella, and Pedevenda find their home, along with the international ones Cabernet Sauvignon, Merlot, Pinot Nero, Chardonnay, and Pinot Grigio.The agronomic management is based on sincere respect for the health of the environment and the truest character of the terroir, which is why Davide embraces the principles of biodynamic agriculture. The winemaking process involves spontaneous fermentations in stainless steel tanks or fiberglass tanks, sometimes accompanied by a short carbonic maceration, with contact on the skins even for white grapes. The subsequent maturation phase takes place in the same type of wine containers or in used oak barrels, in order not to distort the varietal and territorial expression with the aromas of wood. For sparkling wines, the Ancestral Method technique is applied, with the refermentation occurring in the bottle through the addition of frozen must as a source of sugars for the yeasts. Throughout the entire process, the addition of sulfites is either none or minimal.

The selection of Il Ceo consists of wines with a rustic and authentic soul, testifying to the artisanal dimension of the Breganze area. These are adorned with charming labels, in particular with the estate's logo: the rooster.
