Coos Dario
Dario Coos winery is located in the small locality of Nimis, in the province of Udine, in the homeland of the passito Ramandolo. We are at the easternmost point of the Colli Orientali del Friuli, almost on the border with Slovenia, where the microclimate is unique and the vine has been thriving since 1800. The winery is closely linked to this territory and produces wines of extreme quality, ranging from sweet to dry, respecting traditions and history, while also integrating modernity and innovation with care, attention, and respect for the environment in search of new paths and new frontiers. A philosophy that is realized through small gestures from sustainability in the vineyard to the care of the winery, passing through meticulous drying processes and the rigorous selection of barriques. What the wines encapsulate, however, is the territory of this small strip of fertile land, considered among the most suited for grape cultivation and composed of limestone rocks and an ancient ecocenic layer of marl, locally called ponca.
The vineyards of the Coos wineryclimb up the steep terraced slopes and embrace the center of the estate like an amphitheater. Among the rows, the typical varieties of these lands are cultivated: Sauvignon, Chardonnay, Ribolla Gialla, Friulano, Pignolo, Verduzzo, Picolit, and Refosco (which the winery holds dear). The grapes grow healthy and dry, ripen perfectly, and are caressed by the light breezes blowing from the surrounding mountains. This explains why this territory has been perfect for years for the drying of grapes and thus for producing formidable passiti. The grapes are harvested exclusively by hand and carefully brought to the winery based on the ripening period. Fermentations take place in steel at low temperatures using technical gases. The aging occurs exclusively in steel or in medium-light toasted wooden barrels.
